The top derbies of Poland are played in Lodz and Krakow (the oldest clubs in Poland, both founded in 1906). Many see the holy war between the two Krakow teams as the biggest derby in the country but the Lodz derby is increasing in popularity as well. The Holy War of Krakow is for sure the most violent. The hate between the fans is insane.
In Warsaw, which is the capital of Poland, the derby match between Legia and Polonia is also quite big but the rivalries of Legia with Lech Poznan and Widzew Lodz seem to be more important.
In Gorny Slask (Silesia), which is a high populated region with a lot of clubs, the most interesting match is the local rivaly between Gornik Zabrze and Ruch Chorzow (both have won 14 championships). Other big clubs in this region are GKS Katowice, Polonia Bytom and GKS Tychy. The rivalry between Ruch Chorzow and GKS Katowice is also very strong.
In Northern Poland the most exciting matches are played between the local rivals in Tri-city (Trojmiasto): Arka Gdynia - Lechia Gdansk.
Other, smaller, derbies are played in Tarnow (Unia - Tarnovia), Rzeszow (Resovia - Stal) and Debica (Wisloka - Igloopol).
